CHIKKAR CHOLE RECIPE – AUTHENTIC PUNJABI THICK CHICKPEA CURRY

Chikkar Chole – Thick Punjabi-Style Spiced Chickpeas

Prep Time: 20 mins • Cook Time: 45 mins • Serves: 4–6

Introduction

Chikkar Chole is an authentic Punjabi-style chickpea curry that’s bold, rustic, and soul-satisfying. The word “Chikkar” literally means *muddy or thick* — referring to the rich, earthy texture of the masala gravy. Unlike regular chole, this version has no thin sauce — it’s slow-cooked until chickpeas absorb the smoky, spiced base and become coated with flavorful masala.

This dish captures the heart of Punjabi kitchens and dhabas — hearty, spicy, and made with patience. It’s best enjoyed with bhature, kulcha, or jeera rice, often accompanied by sliced onions, green chilies, and a wedge of lemon.

Ingredients

For the Chickpeas:

  • 1½ cups dried chickpeas (soaked overnight)
  • 4 cups water for boiling
  • 1 tea bag or 1 tsp black tea leaves tied in muslin (for dark color)
  • Salt to taste

For the Masala Base:

  • 2 medium onions, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 tbsp ghee or mustard oil
  • 1 tsp cumin seeds
  • 1 bay leaf
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 1 tsp roasted cumin powder
  • 1 tsp chole masala powder

For Garnish:

  • Chopped coriander leaves
  • Julienned ginger
  • Green chilies (slit)

Step 1: Boil the Chickpeas

Soak chickpeas overnight in water. Drain and rinse. In a pressure cooker, add chickpeas, tea bag, salt, and 4 cups of water. Pressure cook for 6–7 whistles until chickpeas are soft yet hold shape. Remove tea bag and set aside.

Tip: The tea bag gives a rich brown hue and subtle earthy tone — a hallmark of traditional Punjabi chole.

Step 2: Prepare the Masala

Heat ghee or mustard oil. Add cumin seeds and bay leaf. Once aromatic, add chopped onions and sauté until dark golden brown. Add ginger-garlic paste and cook for a minute. Now add tomatoes and all spice powders. Cook slowly until oil separates and the masala thickens.

This slow bhunao (roasting) process builds the deep “chikkar” base that defines the dish.

Step 3: Combine Chickpeas & Masala

Add the boiled chickpeas (with some water) into the cooked masala. Mash a few chickpeas with the back of a spoon to thicken texture naturally. Simmer on low flame for 15–20 minutes until the gravy becomes thick, dark, and coats every grain.

Step 4: Dum & Rest

Cover and cook on very low flame for another 10 minutes. This slow dum process allows chickpeas to absorb every note of spice and ghee. Turn off the heat and let it rest for at least 15 minutes before serving — it deepens the color and richness.

Flavor Profile

Chikkar Chole is all about earthy umami depth. The caramelized onions and roasted masala merge into a dense gravy that clings beautifully to chickpeas. The tea bag brings mild bitterness, balancing the chili and tang. This balance between spice, smoke, and sweetness gives Chikkar Chole its unmistakable dhaba-style punch.

Serving Suggestions

  • Serve hot with bhature, naan, or kulcha.
  • Top with ginger juliennes, coriander, and green chilies.
  • Pair with jeera rice and boondi raita for a complete meal.

Chef’s Notes

  • Slow cooking brings out authentic dhaba-style thickness — avoid rushing the masala.
  • Mustard oil gives an earthy depth — if unavailable, use ghee.
  • To make darker, add a spoon of black tea decoction instead of a tea bag.

Health & Nutrition

Chickpeas are packed with protein, fiber, and iron, making this dish both indulgent and nutritious. When cooked in ghee and balanced with spices, they aid digestion and provide sustained energy — a classic Indian example of taste meeting nutrition.
